Cheddar Biscuits


 



I've been searching several years for a recipe that most likely resembles the Cheddar Biscuits from Red Lobster.  I've finally found one that meets the mark.  The original recipe comes from my friend Stella, owner of  Stella B's Kitchen.  Stella's blog is filled with delicious recipes as well as artful food photography.  Thanks Stella for sharing this recipe. 

Recipe
2 cups flour
2 teaspoons baking powder
1 teaspoon sugar
3/4 teaspoon sea salt
1/2 teaspoon baking soda
1/2 teaspoon Lawry's Garlic Salt
1 cup buttermilk
1 stick melted butter, cooled
1 cup shredded Cheddar cheese

Garlic Butter
1/2 stick butter melted
1/2 teaspoon Lowry's Garlic Salt
1 teaspoon fresh or dried parsley
1/2 teaspoon Hungarian paprika

Preheat oven to 425
Makes approximately 1 dozen


Step1
Mix all dry ingredients together in a medium bowl, pour shredded cheese over dry mixture and combine






Step 2
Add melted butter and buttermilk, stir until ingredients are just incorporated, do not over work the dough


Step 4
Using a tablespoon, place rounds on baking sheet lined with parchment paper about an inch apart.  Bake for 12-14 minutes



Garlic Butter


Step 5
Brush melted garlic butter over hot biscuits, serve with chutney, honey or Pineapple Mango Marmalade.  See the link for my recipe and canning instructions. Optional: add chopped jalapenos, cooked bacon crumbles, corn or freeze dried onion for a little twist.

Yellow Tomato Bisque




When my in-laws are in town for a visit, they're always gracious enough to buy BBQ for a big family get together.  The BBQ comes from their favorite joint in Idaho Springs, CO.   Smokin Yards.  The restaurant has won many awards for their fare and make some of the best smoked BBQ brisket and hot links I've ever tasted.  The family is always excited to dig in to the delicious dinner. 


I hosted the meal this time around and made several side dishes to accompany the feast.  Baked Beans, Chili Con Queso with chips, Cheddar Biscuits, and fresh Yellow Tomato and Basil Salad.  After dinner everyone was stuffed to the gills, then we ate Brownie Sundaes for dessert.  Now that's my kinda meal!!

So what does BBQ and side dishes have to do with my recipe for Tomato Bisque?  After feeding thirteen people piles of BBQ, my Yellow Tomato and Basil Salad was put away to be reborn a few days later into this flavorful Tomato Bisque.  As much as I hate leftovers this rebirth was nothing short of wondrous.

I had 4 cups of salad leftover.  The salad consisted of sliced yellow grape tomatoes and about 1 teaspoon freshly sliced basil leaves, salt and pepper.  

A side note: I would not add the basil to the bisque until the last 10 minutes of cooking as it will give off a green tint to the end product. 

Recipe
Make 4 cups
4 cups sliced yellow grape or heirloom tomatoes
1 teaspoon minced white onion
1 teaspoon vegetable oil
enough water to cover tomatoes
1-1/2 cups half and half cream
pinch red pepper flakes
1 teaspoon fresh chopped basil leaves
salt and pepper to taste

Method
  • On stove top heat vegetable oil in a heavy bottom sauce pan on medium heat, add minced onion, red pepper flakes and sweat for 1 minute
  • add tomatoes, add enough water to cover tomatoes
  • cook on medium heat until boiling, reduce heat to low and simmer for 30 minutes
  • Puree cooked liquid in small batches until smooth
  • strain hot liquid through sieve and return to sauce pan
  • raise heat to medium and bring liquid back to a boil
  • add 1/2 teaspoon fresh chopped basil, stir to blend
  • reduce heat to low
  • add half and half, stir to combine and continue cooking for 10 minutes
  • salt and pepper to taste and garnish with remaining basil
 Simple yet elegant, the yellow tomato is the star of this dish.

New Blog Design and Header!!




Thanks to my fellow food blogger and voiceBoks friend, Matthew Peregoy, I'm sporting a new blog header!  RMD is the owner of two blogs; The Real Matt Daddy (Blog), Matt Daddy's Kitchen (Recipes)and contibuter for 12 Most (Contributor) and Daddy's Home (Blogger).

About Matt:

My name is Matt, and I live with my family in Gettysburg, PA. I have given up my 70 hour work weeks as a manager for a national retailer to be a stay at home dad for my little girl. I am married to a wonderful wife who trusts me enough to give this experiment a try while she goes back to work full time. My goals for this site are to share the good, the bad, and the hilarious things that will occur while I become The Real Matt Daddy.

New "Follow My Blog Tool"



A new "Follow My Blog Tool" Created by Brent Riggs at LinkyTools was presented to the web this week by Brent Riggs, owner of LinkyTools.  I have used Brent's LinkyTools as my blogs primary Linky software for almost 2 years with great success and ease.  The paid subscription is a minimal yearly fee and the rewards are worth every penny.   

With the removal of GFC or Google Friend Connect this coming March, every blog space that has "Follow My Blog Feature" will have to make a change to a new service to gain the numbers of followers they've had in the past.  I was super excite to learn of Brent's release of this free service and I plan to use it as my only blog "Follow Feature" in the future. 

I appreciate each and everyone of you so much and can't bear to lose any of you when GFC goes away next month so please take a moment to ♥Follow Me♥!  If you choose to use LinkyFollowers, follow tool let me know and I'll stop by and follow you back.  It may take a few weeks to get to everyone, so we'll all have to be patient during the process.
